These teas originate primarily from Fujian province, where specific varietals and climate conditions contribute to their distinct character. After picking, the leaves are simply withered and dried, preserving their natural essence and allowing for a pure expression of terroir.
In the cup, you'll find light-fermented teas offer a refreshing clarity with delicate floral or fruity notes. The taste is often described as clean and smooth, with a lingering sweetness that becomes more pronounced as the tea ages. It's a gentler experience compared to more robust teas, perfect for those who appreciate nuance.
We particularly enjoy these teas in the morning or during quiet afternoon moments. They're also an excellent choice for those new to tea, as their mild nature is approachable yet still complex enough to reward careful attention.
To brew, use water just off the boil (around 80°C) and steep for 2-3 minutes, adjusting to taste. These teas are forgiving and can be infused multiple times, revealing different aspects of their character with each steeping.
