Same Process, Different Plant

White tea is defined by its processing — or rather, by the absence of it. Freshly picked leaves are withered and dried. No fixation, no rolling, no roasting. The leaf transforms through nothing but time and airflow.

Fuding in Fujian codified that process and has the longest history with it. But the method itself is not exclusive to Fujian. In Yunnan, tea makers have been applying the same minimal approach to a completely different plant: Camellia sinensis var. assamica, the large-leaf variety that also produces Yunnan black tea and the raw material for pu-erh. The result is still white tea by process — but the cup is structurally different.

Assamica leaf is broader, thicker, and naturally richer in polyphenols. Ancient trees that have grown for decades without pruning or fertilization develop root systems deep enough to draw minerals unavailable to younger plantation bushes. That translates into a cup with more body, a different texture, and a distinctly Yunnan character that sits alongside Fuding white tea rather than competing with it.

Yunnan white tea is not formally classified under China's white tea national standard (GB/T 22291–2017), which was written with Fuding's sinensis cultivars as the primary reference. It is processed identically — withered and dried — but made from assamica. The difference is the plant, not the method.

Fuding vs. Yunnan: What Actually Differs in the Cup

Fuding White Tea Yunnan White Tea
Cultivar Camellia sinensis var. sinensis (small-leaf)
Fuding Dabai, Fuding Dahao
Camellia sinensis var. assamica (large-leaf)
Ancient tree material from Yunnan
Leaf size Small to medium; Silver Needle buds are slender and densely silver Broad, thick leaves; buds are large, sometimes called "Snow Bud" (雪芽)
Body Light to medium; delicate and clean Medium to full; thicker texture, more viscous mouthfeel
Young flavor Subtle, floral, sweet soy-milk, melon; cooling finish Bold, stone fruit, honey, slight earthiness; warm finish
Aged flavor Honeyed, dried apricot → dates, 药香 medicinal depth Deep honey, dried plum, resinous warmth; ages toward pu-erh-adjacent complexity
Caffeine Relatively low Higher — assamica naturally contains more caffeine than sinensis
Water temp 85–95 °C depending on grade 95–100 °C; the leaf is robust enough for boiling water
Best for Delicate tasting sessions, quiet mornings, gifting Robust daily drinking, those familiar with pu-erh, collectors of aged material

Three Regions in This Collection

The teas here come from three distinct parts of Yunnan. Altitude, soil, and local tea culture vary meaningfully between them.

Jinggu County
景谷县 · Pu'er Prefecture

High-altitude growing areas between 1,400–2,000m. Jinggu is known for white tea made from its own local assamica population — the leaf tends toward a lighter, more floral expression by Yunnan standards. Both the Silver Needle cake (2023) and White Peony cake (2024) in this collection come from Jinggu spring harvests.

Fengqing County
凤庆县 · Lincang Prefecture

Better known as the birthplace of Yunnan Dianhong black tea, Fengqing also grows ancient assamica trees used for white tea production. The Snow Bud cake (2018) in this collection comes from Fengqing — ancient trees, sun-dried, and now 8 years into its aging arc. Richer, more resinous character than Jinggu.

Xiangzhuqing Village
香竹箐 · Fengqing County

A specific village within Fengqing County, home to one of the oldest known single tea trees in existence — the 3,200-year-old Jinxiu Tea Ancestor (锦秀茶祖). The 2018 ancient tree Shou Mei from this collection draws on material from the surrounding old-growth groves. Deep, resinous, distinctly aged character.

Three Ways In

Whether you are new to Yunnan white tea, want to compare it directly against Fuding grades, or are looking for aged material from a specific region — these three represent the clearest entry points.

Entry Point · Three Regions
Yunnan White Tea Discovery Box — 3 Varieties · 30g Each

Three 30g samples drawn from across this collection — Jinggu Silver Needle, Jinggu White Peony, and Yunnan Shou Mei. The simplest way to understand how the regions and grades differ in the cup before committing to a full cake. Brews well with gongfu, a teapot, or a simple mug.

2023 Harvest · Jinggu Silver Needle
2023 Jinggu Yunnan Silver Needle — 357g Cake

Spring 2023, high mountain Jinggu. Large assamica buds, sun-dried, stone-pressed. Noticeably bolder than Fuding Silver Needle — the bud is thicker, the cup is fuller-bodied, honey and stone fruit rather than delicate melon. A good direct comparison if you already know Fuding Silver Needle. Also the grade with the clearest aging potential in this format.

2018 Harvest · Fengqing · 8 Years Aged
Snow Bud Ancient Tree White Tea 2018 — Fengqing · 357g Cake

Ancient assamica trees, Fengqing County, sun-dried 2018. Eight years of aging in dry storage: the young boldness has given way to deep honey, dried plum, a resinous warmth that has no equivalent in fresh white tea. The body is thick and the finish is long. This is what Yunnan assamica white tea ages toward — distinct from Fuding in character, and worth trying side by side if you collect aged white tea.

How to Choose

You've never tried Yunnan white tea Start with the Discovery Box. Three 30g samples covers all three grades — enough for several sessions each and a clear comparison without a large upfront commitment.
You already drink Fuding white tea and want to compare The 2023 Jinggu Silver Needle is the most direct side-by-side. Same grade name, same minimal processing, same compressed-cake format — but a structurally different cup. Brew both on the same day to understand what the cultivar actually changes.
You like pu-erh and want to explore aged white tea The 2018 Snow Bud from Fengqing is the closest bridge. Eight years of aging on assamica material produces a complexity that will be familiar if you drink raw pu-erh — resinous, deep, long finish. Different category, adjacent experience.
You want something with robust body for everyday use The Jinggu White Peony (2024) or any of the Yunnan Shou Mei cakes are practical daily options. Fuller mouthfeel than Fuding equivalents, boiling water, forgiving to brew. The body sustains a morning session without feeling thin.
You want ancient tree material specifically The Snow Bud (Fengqing 2018), the Xiangzhuqing Shou Mei (2018), and the 2019 Wild Ancient Tree Shou Mei all use gushu (古树) material. Ancient tree tea is not a regulated term in white tea the way it is in pu-erh — read each product page for the specific sourcing notes.
You want something to store long-term Compressed cakes from 2019–2023 are the practical choice for home aging. Yunnan assamica material ages differently from Fuding — warmer and resinous rather than medicinal and sweet — but the direction is consistent and rewarding over years.

Brewing Yunnan White Tea

The rules are simpler than for Fuding: use boiling or near-boiling water, always. The large assamica leaf needs the heat to open fully. Lower temperatures leave the cup flat and the sweetness locked in. A quick rinse (5–10 seconds, boiling, discard) before the first steep is useful for compressed cakes.

Method Water Temp Leaf / Water First Steep Subsequent Steeps Notes
Gongfu — Fresh (1–3 yr) 95–100 °C 5g / 100 ml 20–30 sec +10 sec each 8–10 steeps. The bold young character opens quickly at full boil.
Gongfu — Aged (4+ yr) 100 °C 5g / 100 ml 15–25 sec +10–15 sec each 10–14 steeps. Aged assamica rewards patience — later steeps are often the richest.
Western / Pot 95–100 °C 3–4g / 300 ml 3–4 min +1 min each 2–3 infusions. Reliable and forgiving for daily drinking.
Cold Brew Cold water 5g / 500 ml 10–14 hrs, refrigerated — Works best with fresh or lightly aged material. Rich, naturally sweet, full body.
