The tea that keeps changing while you own it
Sheng pu-erh is made almost the way green tea is: the leaf is pan-fired to stop oxidation, rolled, and dried in the sun rather than in a machine. At that point it is aromatic, floral and — if you brew it like a black tea — fairly punishing. What happens after is the difference. The leaf is pressed into a cake and left alone, and over years the compounds behind that bitterness slowly break down while new ones form.
Its counterpart, shou (ripe) pu-erh, was invented in the 1970s to skip the wait: the same leaf is piled, dampened and turned under blankets for weeks, which fast-forwards the result into something dark, earthy and immediately smooth. Both are pu-erh. Only one of them is still moving.
Storage is not a footnote — it decides which tea you end up with. Two cakes from the same pressing, kept ten years in humid Guangdong and in dry north-west China, will not taste like the same tea. Everything here has been held in our Xi'an dry store: low humidity, clean air, no mustiness and no warehouse taint, so the tea tastes of what it is rather than of where it has been.

Everything here is dry-stored, priced to be drunk rather than laid down, and chosen because it is approachable — several of the formats need no pu-erh knife at all, and none of them require you to already know what you like. Age is the first decision
Before you look at mountains or grades, decide how much age you want — it changes the cup more than anything else on the page. Broadly, raw pu-erh moves through three stages, and the fourth thing below is what makes those stages behave differently from one another.

How we split up our raw pu-erh
Raw pu-erh is the largest part of what we carry, so it is kept in four collections, each sorted by a different question. This one is sorted by approachability: dry-stored, priced to be drunk, and chosen for how easy it is to enjoy. The other three are sorted by age, by origin, and by nothing at all.

Raw pu-erh can change with suitable storage, but so can other tea types. Choose something you enjoy now and keep it protected if you want to follow its development.
We store our teas in Xi’an under naturally occurring ambient humidity. We do not artificially control humidity. Conditions follow the seasons rather than a fixed humidity target; we keep the tea protected from moisture, direct sunlight and strong odors.
