In the misty Tai Mu Mountains of Fuding, Fujian, white tea craftsmanship has remained largely unchanged since the Jiaqing period (circa 1796). Known as the "Birthplace of White Tea," Fuding produces teas that represent the most elemental expression of the tea plant. The name "White Tea" derives not only from the silver-white down (Pekoe) covering the buds but also from its "blank" or unadorned processing—the most minimal among the six tea types.
