"Gold Brick" 2012 Sun-Dried White Peony — Fuding Guanyang · 500g Compressed Brick

Gold Brick — 金砖 in Chinese — is the name on the wrapper. It's a fair description of what's inside: something dense, heavy, and worth the wait.

This is a 2012 late-spring White Peony from Xitou village, Guanyang Town, Fuding — one of the higher-elevation growing areas in the region. The material is a blend of Fuding Dabai and Fuding Dahao cultivars, withered outdoors under direct sun in the traditional manner. It was pressed into this 500g brick in June 2017.

A word on the grade, because honesty matters here: this is late-spring White Peony, harvested toward the end of the spring flush rather than at the peak. The leaves are more developed and the material includes natural tea stems. That puts it somewhere between a classic White Peony and Shou Mei in character — not the most delicate grade, but that's not the point of this tea, and it's reflected in the price. The stems actually contribute something useful: a natural sweetness that runs through the cup and rounds out the body. For a tea meant to be aged and drunk deeply rather than sipped lightly, this is a sensible starting point.

The processing adds another layer. Sun-withering pushes oxidation further than indoor withering, building a thicker, darker base. That foundation, combined with over a decade of aging, has brought this tea into genuinely mature territory. The liquor pours a deep reddish amber — almost red-brown — and the flavors are unmistakably those of a well-aged white: dried date, a warm medicinal depth that the Chinese call 药香 (yào xiāng), and a clean sweetness that lingers long after the sip. The raw, grassy notes of youth are completely gone. What remains is mellow, full, and settled.

Two stages of aging are worth understanding here. The material spent its first five years as loose leaf before being pressed in 2017. Since then it has continued aging as a tight brick. Bricks pressed in that era were compressed firmly — this one holds its shape and requires a tea pick to break apart. That tight compression slows the aging process slightly compared to a loose cake, which means the tea has developed steadily rather than rapidly. The result is consistent throughout the brick.

The tea meets Chinese national food safety standards (GB). There is no organic certification.

Brewing

A note on water temperature: despite being a White Peony by grade, this tea has aged long enough that fully boiling water (100 °C) is appropriate and recommended. The heat opens up the aromatics and brings out the depth that cooler water would leave behind. Don't treat it like a young white tea.

Gongfu (recommended): Use a tea pick to break off approximately 5g and brew in a gaiwan or small teapot (around 110ml). Rinse once briefly with boiling water and discard — this loosens the compressed leaf and wakes the tea up. First steep 20–30 seconds, extend by 10–15 seconds each round. Expect 10 or more rounds. The date and medicinal notes build gradually across the session.

Grandpa / long steep: About 2–3g in a mug or thermos with boiling water. Drink as it steeps and refill when the cup is about a third full. The maturity of this tea means it handles extended contact with water well — no sharpness, no bitterness.

Western / pot: Around 3–5g per 300–400ml, boiling water, 3–4 minutes. The full body and dark liquor come through clearly this way, and it's a low-effort method that suits the character of the tea.

30g sample — enough for six full gongfu sessions. A good way to get to know the tea before committing to a full brick.

500g brick — the complete cake. Store in a dry, odor-free space at room temperature, away from direct sunlight. Given the tight compression, break off what you need as you go and leave the rest intact.

On value: Twelve-plus years of aged white tea from a named origin and producer is not common at this price point. The grade is honest — this is not a premium White Peony — but the aging is real, the flavor is there, and the cost reflects the material rather than any marketing premium. If you've been curious about mature white tea but not ready to spend heavily on it, this is a reasonable entry point.
