Three ways into this shelf

Three ways into this shelf

Raw pu-erh is known for changes during storage, but it is not the only tea that can develop over time. Ripe pu-erh and some other teas also change; the path depends on their material, processing and keeping conditions.

That single fact is why one long list is a poor way to shop for it. A tea bought to drink this month and a tea bought to forget about until the next decade are not the same purchase, and they do not sit happily side by side. So we keep three sorted collections alongside this one, each answering a different question. Between them they cover everything on this page.

One thing is true of every tea here regardless of which list it sits in: all of it has been held in our dry store in Xi'an — low humidity, clean air, nothing added. Two cakes from the same pressing kept in different rooms stop being the same tea, and dry storage is the reason a cake tastes of itself rather than of the warehouse.

"I have never bought raw pu-erh before. Which one will not punish me?"

This is the everyday end of the shelf: young and mid-aged Lincang and Menghai material chosen for how easy it is to enjoy rather than for its name, in formats that mostly do not require a pu-erh knife. It includes the first-flush spring cakes we press ourselves, single-serving mini bricks, and the small formats people actually finish. If you want to know what raw pu-erh tastes like before committing to a whole cake, start here.

"I want a tea that has already changed. I am buying the cup it pours now."

These are the cakes that have come out the other side of the awkward stage — the green edge has gone, sweetness and body have arrived, and the storage has been clean the whole way, so there is no mustiness and no storage odour to read around. Expect camphor, dried fruit, thick sweetness and a long finish rather than florals and bite. This is the collection for drinking rather than keeping.

"I want to taste the difference between one mountain and another."

Read the sourcing scope on each product: Bulang, Bada, Mengsong, Lao Man’e and Yiwu are among the named areas. Within Lincang, Mengku, Bangdong/Xigui and Yongde/Mangfei are distinct origin descriptions; a broad region is not the same as a single estate.

Six teas that show the width of it

These are not a best-of list. Two come from each of the three collections above, and within each pair the two sit at opposite ends of what that collection does — so between them they mark out the corners of the shelf: the cheapest way in and the least equipment, the deepest age and the easiest aged format, the most forceful mountain and the softest. If you read nothing else on this page, these six will tell you whether raw pu-erh is for you and which direction to go.

Spring Ming 2017 Aged Sheng Pu-erh Cake

Lincang material with years of dry storage already behind it, pressed into a generous 400g cake. Settled, sweet and undemanding — a first sheng that does not require you to learn anything before you enjoy it.

Yunnan Mini Raw Pu-erh Tea Bricks

Hand-portioned 4g bricks — one brick, one cup, nothing to pry apart and nothing to measure. Honeyed and mid-weight, in a form that travels. The easiest way to keep raw pu-erh at a desk rather than in a cupboard.

Yiwu leaf from a blend of villages, kept loose for years in dry storage and only then hand-pressed into 100g cakes — old material, recent pressing. Honey sweetness and wild florals where Bulang gives bitterness and weight.

The 2005 Mengku Spring Tips is another older-material raw selection. Silk Road Black Pearl uses raw pu-erh material with a further golden-flower fermentation stage; read it as a distinctive further-processed tea rather than assuming it is equivalent to an ordinary sheng cake.

Where to read next

Where to read next

Raw pu-erh rewards reading more than most teas, because so much of what you are buying is invisible — where it grew, how long it has been sitting, and who kept it. Everything below is written in-house and explores the background in more detail. The six guides are the ones we would point people to first; after that, follow whichever question you still have.

If raw pu-erh is not what you were after

Sometimes the honest answer is that sheng is the wrong tea for the person asking. These three are the usual places people go instead.

How we hold it, and how you should

How we hold it, and how you should

Raw pu-erh keeps changing after you buy it, for better or worse depending on where you put it. At home that means cool, dry, well-aired, and away from anything with a smell — coffee, spice, the kitchen in general. Not a sealed bag in a warm cupboard, and not the fridge. Cakes are happiest left whole and wrapped in paper rather than plastic, and a cake you will finish this year needs none of this. We hold ours the same way in Xi'an, and you can read what that does to the tea in our note on dry storage.

We store our teas in Xi’an under naturally occurring ambient humidity. We do not artificially control humidity. Conditions follow the seasons rather than a fixed humidity target; we keep the tea protected from moisture, direct sunlight and strong odors.
