Присоединяйтесь к чайному сообществу!

Наши клиенты и любители чая часто собираются в сообществе The Tea Table на Discord, посвященном чаю, которое было создано в 2020 году энтузиастом чая Liquid Proust .

White Tea's Jujube Aroma, Built in 72 Hours

White tea does not need ten years to smell of jujube. A Food Chemistry study produced the aroma in 72 hours of pile-withering, and named the compounds behind it.

White tea does not need ten years to smell of jujube. In a Food Chemistry study, a team produced the aroma in three days: Fuan Dabai leaves, withered and then piled for 72 hours, outscored every other stage tested for sweet jujube character. Seven aroma-active compounds stood out; three tracked the note most closely: benzaldehyde, benzyl alcohol and β-ionone.

Jujube aroma, the sweet scent of dried red dates, has always been filed under storage. This does not overturn that, but it shows the note can arrive through a processing step too, which makes it a weaker signal of age than many buyers assume.

    In Brief

    • Jujube aroma is usually described as a product of years in storage.
    • A 2026 Food Chemistry study produced it with a pile-withering step: 72 hours scored highest, 84 hours lower.
    • Seven key aroma-active compounds came out of 107 volatiles; benzaldehyde, benzyl alcohol and β-ionone correlated most strongly with jujube intensity.
    • One cultivar, one garden, one harvest month. The study does not compare quality against naturally aged tea.

Where the Jujube Note Normally Comes From

Tea sellers usually put jujube aroma at seven years, from the old saying: one year tea, three years medicine, seven years treasure. Our guide to aged white tea covers what changes over that time. The framing has a weakness: an aroma can be built in days, and years cannot.

    What the Team Did

The leaves were Fuan Dabai, plucked as one bud with three to four leaves in October 2023 at Guanyin Rock in Zhenghe County, Fujian. Three independent batches ran the same process, with samples taken at fresh leaf, withered leaf, and after 48, 72 and 84 hours of pile-withering.

Pile-withering extends withering by heaping the leaves and leaving them. It already appears in white tea making, to strip green notes and build sweetness, but no one had detailed how it shapes a jujube note.

Aroma scores rose and then fell. The 72-hour sample scored highest and carried the clearest sweet jujube character, and 84 hours scored lower. Across the run the team identified 107 volatile compounds. Piling drove alcohols, aldehydes and ketones up and pulled hydrocarbons and esters down, and 421 differential metabolites appeared, mostly flavonoids.

    The Seven Compounds

To find which volatiles carry the note, the team compared its tea with two references: Aksu red jujubes from Xinjiang and a Shou Mei made in 2010. Seven compounds emerged as key aroma-active candidates: (Z)-linalool oxide (furanoid), hexanal, β-myrcene, benzyl alcohol, geraniol, β-ionone and benzaldehyde.

Three correlated most strongly with jujube intensity: benzaldehyde, benzyl alcohol and β-ionone, with benzaldehyde standing out across all three samples.

Docking the seven against 16 olfactory receptors gave binding energies from −3.807 to −7.771 kcal/mol, with β-ionone the strongest. Docking models how a molecule fits a receptor, so it ranks candidates rather than measuring what anyone smells. The follow-up was an addition test: putting the compounds back increased the jujube character.

    What This Does Not Show

The sample base is narrow: one cultivar, one garden, one October. Aroma scores came from the research panel rather than a consumer panel, and nobody measured preference.

Nothing here says a pile-withered tea equals a naturally aged one. The 2010 Shou Mei served as a reference for comparing volatiles, not as a benchmark to match. Pile-withering produces a style, and imitating a vintage is a different activity.

It does not measure quality either: the study reports nothing on body, sweetness, or stamina across infusions.

Our View: A Jujube Note Is a Description, Not a Date Stamp

We sell aged Shou Mei, and jujube is a word customers reach for. This study is a reminder that the word describes a smell, not a reading of storage time, because a processing step can put the same smell there in days.

What years add is a package rather than a single note: a thicker liquor, less edge, and the ability to keep giving across many infusions and then a boil. That is the part you taste instead of smell. The same caution applies to other named aromas, including the betel nut note in aged Liu Bao. For that grade, see our Shou Mei guide.
