If ripe puerh had a reference standard, 7572 would be it. The recipe number unpacks cleanly: "75" anchors its origin to 1975, "7" identifies a grade-7 blended leaf composition, and "2" designates Menghai Tea Factory. For over four decades, this formula has been the yardstick — not the priciest or the rarest tea Menghai produces, but the one that taught generations of drinkers what properly fermented puerh should taste like. It is a tea defined not by novelty, but by consistency.

The 2101 batch is the first pressing of 7572 in 2021, produced in March. This batch shipped with Dayi's fifth-generation anti-counterfeit system — a tactile upgrade layering engraved intaglio printing over the familiar security thread, micro-text, and fluorescent ink. While 7572 is widely available from many sellers, the variable that sets one cake apart from another is storage. These cakes have been held in our Xi'an dry storage — a warehouse in northern China where natural low-humidity conditions preserve the tea's integrity and keep it entirely free of the damp, musty notes that plague poorly warehoused ripe puerh.

7572 does not announce itself loudly. It builds. And because this batch has never touched a humid warehouse, what registers first is how clean it drinks — no cellar must, no off-notes, just the tea speaking plainly. The first two steeps open with a light, clean sweetness and a gentle body, barely any bitterness in sight. By the third and fourth rounds, a restrained, roasted-grain bitterness emerges on the tongue, then gives way to a swell of salivation along the sides and under the tongue. The jujube-date aroma that defines 7572 anchors the middle steeps, while the finish carries a thread of caramel warmth that lingers. By the fifth or sixth brew, the tea settles into an easy, persistent sweetness. The wet leaf, deep chestnut brown flecked with golden tips, holds its composure deep into late infusions.
