What Is Shou Mei (寿眉)?

What Is Shou Mei (寿眉)?

Shou Mei (寿眉), or “Longevity Eyebrow,” is a white tea type associated with a more mature-leaf appearance. It is not “Grade 4” of white tea. Under the national classification, its raw-material description includes the shoots or leaves of specified cultivars or local tea populations; grades are then defined within the type.

Its leaf-led character offers a different balance from bud-only Silver Needle. Body and development depend on the actual material, processing and storage, not simply on a presumed higher sugar content.

"一年茶,三年药,七年宝"  —  One year a tea, three years a medicine, seven years a treasure. This saying comes from Fuding. It was written with Shou Mei in mind.

Where Shou Mei Fits: White Tea Types and Their Grades

Silver Needle, White Peony, Gongmei and Shou Mei are white tea product types, not grades one through four. Each type can have its own quality grades. White Peony is made from a bud with one or two leaves; cultivar and raw-material requirements also matter, particularly when distinguishing Gongmei from Shou Mei.

Type Plucking Standard Harvest Time Young Flavor Aged Flavor Best For
Silver Needle Unopened buds only Early spring Delicate, sweet, melon, fresh hay Honeyed, floral complexity Special occasions, gifting
Bai Mu Dan Bud + 1–2 young leaves Mid-spring Floral, fuller body, sweet soy-milk Dried apricot, honey, herbal warmth Daily drinking, newcomers
Gong Mei Tender shoots of seed-propagated local tea populations (quntizhong) Late spring Fruity-sweet, bold, hay-like Date sweetness, rich amber cup Daily drinking, transitional grade
Shou Mei ← you are here Mature leaves + stems Late spring / autumn Herbaceous, earthy-sweet, bold Dried dates, 药香 depth, woody warmth Aging, collecting, robust daily use

Sun-Dried vs. Indoor-Withered: Why Processing Matters for Aging

The range includes teas described as sun-dried and other withering styles. Read each product’s process: sun withering, indoor withering and final drying are different steps and terms should not be treated as automatic quality rankings.

Method Character When Young Character After Aging
Sun-dried (日晒)
Withered under direct sunlight outdoors
Bolder, slightly more oxidized, warm sweetness, heavier body Thicker, darker liquor; rich date and honey depth; warming, rounded character
Indoor-withered (室内萎凋)
Withered on shaded, ventilated racks
Lighter, cleaner, more restrained; delicate initial profile More floral notes linger; mellow rather than deep; less body, more elegance

Neither is objectively better — they suit different preferences. For depth and aging potential, sun-dried material has a structural head start. Where it is relevant, the withering method is noted on each product page.

How Shou Mei Changes Over Time

White tea can change in storage, but the path and pace vary. Honey, fruit or woody notes are possibilities rather than guaranteed stages at fixed years.

1–2 Years
Fresh
Herbaceous, dried hay, light natural sweetness. Some astringency still present. Liquor: clear golden-yellow.
3–5 Years
Early Aged
Dried apricot and honey notes emerge. Astringency fades. Body fills out and rounds. Liquor: deepens to amber.
6–9 Years
Mid Aged
Dried date sweetness dominates. Warming, round character. 药香 beginning to develop. Liquor: deep amber to reddish-amber.
10+ Years
Deep Aged
Pronounced medicinal depth, dried jujube, woody sweetness. Very smooth, nothing raw. Liquor: dark red-brown.

Timelines vary with storage conditions. These descriptions assume dry storage at stable room temperature — the same environment we use in Xi'an.

How to Choose

The range includes Fuding and Yunnan Shou Mei selections across different years and formats. It also contains related Gongmei and white-tea-based Fu products; read those as distinct selections rather than treating every listing as identical Shou Mei.

You want to try aged white tea for the first time Start with the 2021 Fortune mini cake. Small format, loose pressing, no tools, very forgiving to brew. If the flavor makes sense to you, the next step is clear.
You want a reliable daily drinker The 2018 350g cake is the practical choice — enough for months of daily sessions, honest grade, date sweetness without being overly complex. Try the 30g sample first if you prefer.
You want deep aged flavor — the real 药香 Go to the 2014 waffle cake. Ten-plus years in, the medicinal depth is clearly there. The scored waffle format means no tea pick needed — break off one section per session.
You want to buy and hold for a few years Any sun-dried cake from 2021–2024 is a reasonable choice. Buy a tong (7 cakes), store it at room temperature away from light and odors, and revisit it in 2–3 years.
You want something outside the Fuding standard The Yunnan ancient tree options use large-leaf assamica cultivars from a different terroir — thicker body, different energy. Worth trying if you already know Fuding Shou Mei well.
You want a gift The Fortune 2021 mini cake has a clean wrapper with a traditional 福 character seal. Simple, meaningful, easy to send. The small size also makes it practical to include alongside other teas.

Brewing Shou Mei

Mature-leaf and compressed white teas often work well with hot water and short steeps. Start from the suggested parameters, then adjust portion and time. Long steeping can still produce a stronger or more astringent cup.

For compressed cakes, a quick rinse (5–10 seconds, boiling water, discard) before the first steep helps loosen the leaf and open up the aroma.

Method Water Temp Leaf / Water First Steep Subsequent Steeps Notes
Gongfu — Young (1–3 yr) 90–95 °C 5g / 100 ml 25–35 sec +10 sec each 7–9 steeps. Slightly lower temp preserves what freshness remains.
Gongfu — Aged (4+ yr) 95–100 °C 5g / 100 ml 20–30 sec +10–15 sec each 10–12+ steeps. Full boil opens date sweetness and medicinal depth fully.
Western / Pot 95–100 °C 3–4g / 300 ml 3–4 min +1 min each 2–3 infusions. Good for mornings or when a gongfu setup isn't practical.
Grandpa / Mug 95–100 °C 2–3g / 250 ml Drink as it steeps Refill when ⅓ remains The low bitterness of aged Shou Mei makes it exceptionally forgiving for long-steep drinking.
Cold Brew Cold water 4–5g / 500 ml 8–12 hrs, refrigerated — Fresh or lightly aged Shou Mei works best. Naturally sweet, generally low bitterness when brewed to taste.

Storing and Aging Shou Mei at Home

Shou Mei is the most forgiving of white teas to store. Keep it away from light, moisture, strong odors, and temperature swings. A sealed ceramic jar or layered foil bag inside a dark cupboard works well. Avoid the refrigerator — condensation when you take the tea out does more harm than good.

Compression changes handling and exposure, but does not independently guarantee better aging than well-packaged loose tea. Choose the form you can store and portion well.

All teas here have been dry-stored in Xi'an since sourcing. Xi'an's low humidity keeps the flavors clean and the leaf intact — no mustiness, no off-notes. See how we store it →

For a full guide to storage conditions, containers, and the difference between aging-forward and freshness-forward approaches: How to Store White Tea: Keep It Fresh or Let It Age →

We store our teas in Xi’an under naturally occurring ambient humidity. We do not artificially control humidity. Conditions follow the seasons rather than a fixed humidity target; we keep the tea protected from moisture, direct sunlight and strong odors.

The White Tea Family

The White Tea Family

Shou Mei offers a mature-leaf style to compare with the bud-led character of Silver Needle and the bud-and-leaf balance of White Peony. None is automatically the most age-worthy in every production.
