Raw Pu-erh Tea Guide: Dry Storage, Product Lines & Brewing

Xi'an Dry Storage — How Storage Shapes Raw Pu-erh's Destiny

Raw pu-erh is often called a "living" tea, and for good reason: unlike green tea, which is fixed at its final state the day it's made, raw pu-erh continues to ferment and transform for decades. The leaf contains active enzymes and microbial communities that slowly reshape its chemistry over time. This is what makes raw pu-erh so fascinating — and it's also why storage matters more for raw pu-erh than for almost any other tea.

The problem with wet storage for raw pu-erh:

Most raw pu-erh on the market is wet-stored in Guangdong or Southeast Asia, where high humidity (75–90%) accelerates the aging process. The tea changes faster — but the transformation is coarser. Wet-stored sheng tends to develop a heavy, "stuffy" (闷) quality: the bright, floral, fruity notes that define great raw pu-erh get flattened into a uniform dark, woody flavor. The distinctive hui gan (returning sweetness) weakens. The tea ages, but it loses the thing that makes raw pu-erh worth aging in the first place.

What dry storage does instead:

After pressing in Yunnan, every raw pu-erh in this collection is moved to our storage facility in Xi'an, northwest China. Xi'an's climate is fundamentally different from Guangdong's: relative humidity sits at 50–65% for most of the year, temperatures stay moderate with four distinct seasons, and natural ventilation is constant. This is what tea professionals call dry storage (干仓).

  • Slower, cleaner aging. Low humidity slows the microbial activity that drives fermentation. The tea ages over years rather than months — but each stage of the transformation is cleaner and more distinct. You can taste the difference between a 3-year-old and a 5-year-old tea; in wet storage, those stages blur together.
  • Preserved aromatic vibrancy. The compounds responsible for raw pu-erh's floral, honey, fruit, and camphor notes are volatile — they're the first thing excess moisture destroys. Dry storage keeps them intact, so even our 10-year-old sheng still has the brightness that wet-stored tea loses within a few years.
  • Stronger hui gan. Returning sweetness — the way a good raw pu-erh leaves a sweet, lingering sensation on the tongue after the initial bitterness fades — depends on the tea's amino acid and polyphenol balance. Dry storage preserves this balance; wet storage breaks it down.
  • Honest aging. Dry storage doesn't mask flaws. If the starting leaf was poor quality, dry storage won't hide it the way wet storage can. This means every tea we dry-store has to be good enough to survive the process — which is itself a quality filter.

This is why our mid-aged sheng is already smooth and drinkable at 5–8 years, while still retaining the energy and complexity that will let it continue improving for decades more. It's also why our 2005 and 2006 vintages taste remarkably alive for 20-year-old teas: dry storage preserves rather than erodes.

Three Product Lines, One Standard

Every raw pu-erh we sell goes through the same Xi'an dry storage and the same quality screening. What differs is the starting leaf, the aging time, and the character of the tea. Here are our three product lines and how to choose between them.

Starter Sheng — Find Your Starting Point

Raw pu-erh can be intimidating — the bitterness, the unfamiliar flavor vocabulary, the cake you have to pry apart with a knife. This line exists to remove those barriers. These are approachable teas in accessible formats: standard 357g and 400g cakes for sharing, 100g mini cakes for trying without commitment, tuo tea and mini bricks for single-cup convenience. The selections include young first-flush teas (2023 Menghai Golden Abundance, 2023 Bulang Buds) that show what fresh sheng tastes like, alongside already-aged options (Spring Ming 2017, Value Classic 2008 Tribute) that demonstrate how the flavor transforms with time. The brewing is forgiving — a gaiwan or even a large teapot works. If you're curious about raw pu-erh but don't know where to begin, this is the line that lets you explore without overthinking it.

Dry-Stored Mid-Aged Sheng — Xi'an Dry Stored, Ready to Drink

This is where dry storage becomes the story. These teas have spent years in our Xi'an facility, and they're at the stage tea drinkers call "ready to drink" (适饮期) — the sharp astringency of youth has mellowed, the hui gan has deepened, and the flavor has opened into something layered and complex. The line spans vintages from 2016 to 2006: Lincang ancient arbor cakes, Mengku Rongshi single-village material, Xiangzhuqing golden leaf bricks, and award-winning TeaSoul coins. It also includes our Xiaguan dragon pearls — 12-year and 18-year aged Yiwu and wild ancient tree material pressed into single-serve pearls that are perfect for trying premium aged sheng one cup at a time. These teas reward gongfu brewing: small pot, short steeps, attention to how the flavor shifts across 10+ infusions. Single-Origin Sheng — Where the Tea Comes From Matters

Raw pu-erh, unlike ripe, doesn't go through pile fermentation — which means the character of the starting leaf shines through almost unmodified. Where the tea grows matters more for sheng than for any other tea category. This line is built around that principle: every tea here comes from a specific, named origin, and the differences between them are the differences between Yunnan's tea mountains. Lao Man'e in Bulang produces tea with intense power and a bitterness that transforms into extraordinary sweetness. Yiwu is famous for its soft, honeyed elegance. Mengku's micro-territories — Xiao Hu Sai, Dahusai, Rongshi Mangbo — each have their own distinct character. The Snow Mountain wild ancient trees grow in near-untouched forest. Our oldest vintages live here too: a 2005 Mengku spring tips cake with 20 years of dry-storage aging, and a 2013 Yiwu loose-aged for a decade before pressing. These are teas for the drinker who wants to understand how terroir shapes flavor — and for the collector who knows that single-origin raw pu-erh is the category most likely to appreciate in value over time.

What's the same across all three lines: every tea is single-origin Yunnan large-leaf, sun-dried and pressed without artificial fermentation, dry-stored in Xi'an, and screened for clean character. The difference is the leaf grade, the origin specificity, the aging time, and the depth of complexity — not the quality standard.

Where the Leaf Comes From — Yunnan Terroir

For raw pu-erh, terroir isn't a marketing detail — it's the primary driver of flavor. Because there's no pile fermentation to homogenize the leaf, the character of each mountain comes through almost unmodified. Our collection draws from Yunnan's most respected tea regions:

Menghai (勐海) — Bold, powerful, and classically bitter-sweet. Menghai raw pu-erh is known for its intensity and aging potential. The bitterness in young Menghai sheng is a feature, not a flaw — it's the structural backbone that transforms into deep sweetness over years of aging. Our Menghai Golden Abundance and Value Classic 2008 Tribute showcase this region's character.

Lincang (临沧) — High-altitude gardens producing naturally sweet, aromatic sheng with a softer mouthfeel than Menghai's. Lincang is home to some of Yunnan's oldest cultivated tea trees, and its ancient arbor material is prized for layered complexity. Our Spring Ming, Dazhai, and 300-Year Ancient Tree cakes all come from Lincang's old gardens.

Bulang Mountain (布朗山) — One of Yunnan's most famous ancient tea territories, including the legendary Lao Man'e village. Bulang raw pu-erh is intense, bitter, and powerful when young — but ages into extraordinary depth and sweetness. For drinkers who love bold, characterful tea, Bulang is the benchmark.

Yiwu (易武) — The most celebrated name in raw pu-erh. Yiwu teas are known for their soft, honeyed elegance, gentle astringency, and exceptional aging potential. Our 2013 Yiwu loose-aged cake and Xiaguan Yiwu dragon pearls showcase why this small region commands such reverence among tea collectors.

Mengku (勐库) — A tea region of remarkable micro-diversity, where neighboring villages produce noticeably different teas. Mengku's sub-regions — Xiao Hu Sai, Dahusai, Rongshi Mangbo, and the Mengku Rongshi estate — each have their own character. Our single-origin Mengku collection lets you taste these differences side by side.

Snow Mountain (雪山) — Near-untouched ancient tea forests at high altitude. Wild-grown trees, minimal human intervention, and extreme growing conditions produce tea of singular character: intensely aromatic, complex, and unlike anything from managed gardens.

Brewing Raw Pu-erh

Raw pu-erh brewing is more sensitive than ripe — the same tea can taste bitter and unpleasant or sweet and complex depending on how you brew it. The key variable is water temperature: too hot on a young sheng extracts harsh bitterness; too cool on an aged sheng fails to draw out its depth.

Gongfu brewing (recommended for all lines):

  • Water temperature: 85–95°C for young sheng (under 5 years), 95–100°C for mid-aged and aged sheng
  • Tea-to-water ratio: 5g tea per 80–100ml water
  • Rinse: 1 time, 5 seconds. One rinse is enough for raw pu-erh (unlike ripe, which needs two). This removes dust and opens the compressed leaf.
  • First 3 steeps: 5–8 seconds for young sheng, 8–12 seconds for aged
  • Steeps 4–8: 10–20 seconds
  • Steeps 9+: 30–60 seconds
  • A good cake yields 8–15 infusions; ancient tree material can exceed 15

Western brewing (for Starter Sheng daily drinking):

  • 3g tea in a 300ml pot, 85–90°C water
  • First brew: 30 seconds, discard (rinse)
  • Second brew onwards: 2–3 minutes per steep
  • Yields 3–4 large cups

The bitterness question: Young raw pu-erh is supposed to have some bitterness — it's the structural backbone that ages into sweetness. But bitterness should transform: after swallowing, you should feel a sweet, cooling sensation spreading across your tongue and throat. This is hui gan (回甘), the returning sweetness that is the hallmark of good raw pu-erh. If the bitterness just sits there without transforming, either the brewing was too aggressive (too hot, too long, too much leaf) or the tea itself is low quality.

One tip: The same tea brewed at different temperatures reveals different faces. Try your young sheng at 85°C first — you'll get floral, sweet notes. Then try 95°C — the bitterness will be more prominent, but so will the hui gan. Both are valid expressions of the same tea.
